Fresh Soup Safe Handling Procedures

 

In order to provide your customers with the freshest, safest and best tasting soup possible, be sure to follow these procedures for heating and handling fresh soup.

 


  • For your safety and best results, store soup refrigerated in original pouch between 33°F - 38°F.
  • Once heated, product must remain between 140°F - 165°F.
                          
    Heating Instructions:
    (preferred method)
      
    Heat to 165°F in original pouch; in boiling water; in combi-oven; or in steamer. (about 20-30 min)
        
    Alternate methods:
       
    1. Remove from pouch and place in heavy bottom pan and heat on medium low until 165°F (about 20-30 min). Stir to prevent scorching.
       
    Or:
       
    2. Remove from pouch and place in microwave safe container. Heat to 165°F on high setting. Stir halfway through to avoid hot spots. Do not microwave in pouch!
